Preparation process

Method number 1

  3. Prepare sugar syrup, taking (based on 2 kg of pitted berries) 700 ml of water and 600 g of sugar. Place cherries in boiling syrup and boil for 5-7 minutes.
  4. Throw the boiled cherries back onto a sieve to remove excess liquid.
  5. Cool at room temperature and place on a flat surface (for example, a baking sheet) in one layer, then remove to a dark, dry place.
  6. After 2-3 days, each cherry berry must be turned over and left for another 7-10 days.

Method number 2

In this case, sugar-dusted cherries to extract juice leave at a temperature of 4-5 degrees for 3 days.

Method number 3

The fastest and most popular way to dry cherries at home is oven-dried. After traditional preparation of fruits, instead of a 2-week process in air, a 3-hour manipulation is performed in the kitchen.

  1. So, the product boiled in syrup must be laid out on a baking sheet in one layer and placed in a gas (or electric) oven preheated to 80 degrees for 30-32 minutes.
  2. After the cherry has cooled, it must be carefully turned over and placed back for another 30 minutes.
  3. Further, similar manipulations are carried out another 1-2 times, but already at a temperature of 65-70 degrees.

Do not exceed the temperature and time, since the cherry can turn out to be very dry.

Modern housewives use such a device for an electric dryer. The process, as in the case of the oven, takes relatively little time, with one positive difference: there is no need to take out, cool and turn the berries.

The device does everything by itself. Having laid out the cherries on the trays of an electric dryer, and choosing the optimal temperature (each model has its own conditions, so it is better to refer to the instructions of the device), after 10-12 hours you will be able to taste the excellent taste of the product.


The dried cherry flavor itself is very good, but it can be improved. For example, cinnamon lovers will appreciate the following cooking option:

  • pitted cherries - 1000 g;
  • sugar - 450 g;
  • juice of 1 orange;
  • cinnamon - 2 tsp

The method of preparation and drying itself does not differ from the standard process. However, at the stage of pouring sugar over the berries, in the latter it is necessary add ground cinnamon and sprinkle with orange juice over the cherries. After going through all the drying stages, the cherry acquires a spicy cinnamon aroma.

Instead of cinnamon, you can use ground nutmeg, or other spices to your liking.

Storage method

Storage of the finished product is carried out in a tightly closed glass container in a dark room with a relative humidity of 60-70%, the temperature should not go beyond 12-18 degrees.

You can also save berries for a long time (more than 1 year)by placing them in a paper bag and then in a polyethylene bag.
